In Our Kitchen

What is this?? The best candy recipe ever. Peanut Brittle - one of our favorites and this is so much better than any I have ever bought. A friend gave me the recipe last month and I have made it 4 times. It is made in the microwave and you have to move very fast because it gets hard very fast!!!
It hardens faster than you can imagine, but loosens up once soaked in hot water.

Once it hardens you just slam the cookie sheet down and you have peanut brittle in bite size pieces.

Another favorite: Taco Casserole - thank goodness Dave likes casseroles. You spread beans in the bottom of the pan, sprinkle with cheese, make the tacos and bake. So good!


We love Chinese/Asian food and this is one of the best recipes I have made. These are new spices to me, but they really add the flavor. Oyster Sauce, Maggi Sauce and Rice Cooking Wine. It is kind of fun going to the store and hunting for these products. Kroger has a very large selection of ethnic products.

Asian Noodles - WOW! These were a hit. This is the first time I have cooked "fresh" Asian Noodles - they are found in the refrigerator section or in the frozen section. I am not sure what made this dish special - maybe all the ingredients.

Chicken with Plum Sauce. Cooked on the Jenn-Air.

The noodles are boiled for 3 minutes, then placed in the fry pan with all the other ingredients.

This was my favorite meal in a long time. And there was enough for leftovers. It was even better the next day.

I decided I needed a new look in the kitchen. So I tore down the red wallpaper. I was going to paint, but found this paper and it just grabbed me. Dave wasn't sure at first. But it really looks good with our red counter tops and accessories.

I even like it better than I thought - I hung it up with tape for the last 2 weeks to see if it would have appeal - it worked for me.











Our Yard in the Winter

Our garden is pretty sad looking. It won't be long before we will be planting.

We are going to re-do the kid's area this spring. I have requested a clothes line in the background to hang a quilt on occasion.

A new addition to the pond - Dave wanted this bridge. I thought it would be too large, but it looks really cute.

Can't keep Dave out of the yard for so long.

Girls Night Out

Amy and I had a girls night out recently. We went to the Swift Creek Playhouse - a local dinner theater. I go by this playhouse everyday going to work and I noticed that "Little Women" was to be there during the upcoming month. Dave wasn't that keen on going, so I asked Amy. This is the book that I loved as a child, and how I chose the name "Amy". My middle name is Jo and now we have a Meg - all names from the characters in the book. The play was so good, we had a great time! And Meg had a great time with her Papa.

Our little Meg, so cute and full of fun and smiles. She cracks us up all the time. Amy and Paul had some great one on one time with Alex while we had Meg. Next we will have Alex so Mom and Dad can have some one on one time with Meighan.

Happy Valentines Day

We had a very nice Valentine's Day. My husband is sooo sweet. We had decided not to exchange gifts or do anything far out......, well coming home from work on Wednesday night, I thought I just wanted to do a little something for my hubby, so I made a few stops and before I left for work on Valentines Day I left a few goodies around the house for him ....a few surprises, just little things I thought he would like. I didn't take any pictures, but I think he liked his surprises.
And... I was surprised when Dave showed up at my office at lunch time on Thursday with this cute bear (he sings Elvis by the way) and these beautiful roses and iris in a teapot---I love it.
That evening we went out to dinner and had my favorite champagne when we got home - Tosti is the best!
Dave also got me this cute little cake, the kids came over and helped gobble it up! They love chocolate!



I had a few requests from my coworkers for some valentine sugar cookies:
I love making these and eating them - a real downfall when you are trying to lose weight.

Ready to go: On the left, a gift for my co-worker, middle - for all my co-workers and on the right a batch for Amy and her family, you can't see, but the big heart had "Meg" written on it. There was a personalized one for each member of Amy's family.

Dave's winter project.

We bought this dollhouse kit at AC Moore when we were in Roanoke for a football game in 2006. It sat in the garage for quite a while. I guess Dave figured I would never get it started so he did. It has become quite an obsession for him. He is doing a great job and the kids are going to love it.




We have had fun hunting for items for the house. We found a family; even twins.




We have a ways to go, but it won't be long. I was going to put up wallpaper, but Dave is doing that too. He is also putting electricity in. Can't wait to see the finished product.
